Thank you for this information.

I guess I'll simply use the .NET library with Unity. And won't develop with UWP at all and use e.g. a PhidgetAdvancedServo 8-Motor controller instead of a controller from another company.

Sadly the PhidgetAdvancedServo only supports RC pulse-width signals so it's not possible to control all available servos.....

The 1061 should be able to control any RC-Servo. We do have other motor controllers for other types of motors (DC, Stepper, Brushless) - was there a particular servo you were hoping to control?

Thanks. That PhidgetAdvancedServo 8-Motor is definitely my Phidgets favorite to control servos. :)

Like mentioned here I am interested in controlling Dynamixel servos made by Robotis.

They also offer a controller but I think it's not written in native C# .Net so it'll probably not work in Unity and their documentation, support & resources are not so good.. or at least they look scary to me as a beginner compared to your learning materials.
