Changelog for software update 1.6.20201120 says there is a new firmware for 1067 and STC100x but does not provide any detail as to what the firmware update is fixing or adding/removing.

Could you please elaborate on changes/fixes in the firmware?

There was an issue that caused STC100X/1067 to detach at very low acceleration in certain scenarios. That was fixed. Also fixed an issue that caused inaccurate accelerations in certain situations. In order to assure accurate accelerations at any point, we suggest not changing acceleration while the stepper is moving.
